As we cook it today; it varies a little.
How we make it
Rice, urad dal and poha are soaked, ground coarse and fermented overnight; to order the batter gets onion, chilli and coriander and is cooked in an oiled appe pan, turned once. Coconut and green chutney on the side.
Appe — little round dumplings from a dimpled pan — are a Konkan tiffin made from the same family of fermented batters as dosa and idli.
