How we make it

Khoa is cooked with sugar and a splash of milk until it leaves the pan, flavoured with cardamom and saffron, cooled and pressed in a modak mould.

Ganesh is offered 21 modaks at Ganeshotsav; moulded mawa modak, which needs no steaming, is the kind bought by the box for it.
